Tablón de Gómez is a mountainous region known for its fertile volcanic soils, cool climate and abundant rainfall. These unique natural conditions create the perfect environment for producing coffee with a complex and sweet flavor profile. These traditional Colombian varieties are grown in the shade of fruit trees and native species, favoring slow ripening, which translates into greater intensity of flavor and aroma.
The beans are hand-picked with rigorous ripeness standards, then fermented underwater and dried on raised beds. The result is a coffee with an elegant profile dominated by notes of caramel, spice and fresh orange, balanced by the delicate acidity characteristic of the best Nariño coffees.
